After all, one assumes that summer offers little chance of making soup a part of your diet because of the rising temperatures. Gazpacho is a cold Spanish soup, perfect for hot summer days. Traditionally it is made with fresh tomatoes, cucumbers, red onions, and garlic. You can also add fresh garden vegetables and spice up the Tabasco and Worcestershire sauce.

Spicy Tomato and Watermelon Gazpacho

Gazpacho is traditionally used in a cold soup, so that the rich tomato soup offers a refreshing respite. However, this recipe for spicy tomatoes and watermelon Gazpacho will take your tastebuds to the next level. It has a sweet watermelon mixed with hot spicy peppers against the base of the tomato. You can pair it with focaccia or even freshly baked sourdough.

Chilled peach soup

If peaches are in season, you should try the peach soup. This delicious Peach Soup is also simple and fresh. All you need is peaches, or peach juice and a base of coconut milk cream. The best part is that you can swap peaches and add any other fruit you like to get delicious results!

Holodnik or Polish Cold Beet Soup

This soup is originally from Poland, and locals often make Holodnik, better known as Chlodnik, with fresh beetroots. It is a perfect fix for times when you crave low-fat foods as this has fewer calories and is a vegetarian diet—typically made with cucumbers, seedlings, and beets, mixed with boiled egg and topped with pumpernickel bread. It is highly nutritious as it has very few spices, making it a healthy dish.

Chilled Green Pea Soup Latte

Whether it is frozen peas you choose or fresh, this summer recipe will make you crave for more. It is easy to prepare and has delicious oodles. It can be topped with slices of dill, crispy fried onions for a delicious garnish and topped with shiny bread or even croutons.

White Gazpacho

Not all gazpachos are made with tomatoes. White gazpacho is an ancient dish from Spain, with earlier versions since the Moors ruled Andalucia. This version is made from bread, blanched almonds, green grapes, cucumbers, olive oil, and garlic. The strangest combination you can think of, but let us assure you, it is amusing. The soup gets protein from blanched almonds. Bread acts as a thickener, and cucumbers are amazingly cool.

Avocado and corn Gazpacho

You can have this simple gazpacho made with tomatoes, cucumbers, peppers, and tomato juice, seasoned with sherry vinegar and hot sauce. You can’t really win this cold soup for refreshing food, day or night, when it’s time for corn and tomatoes. Add sour cream avocado to make this a filling meal. But the base remains the same chopped tomatoes, cucumbers and poblano peppers with perky vinegar kernels from sherry vinegar.
