Covid Positive : What to Eat For A Quick Recovery?


As the country is dealing with almost a third wave of covid-19, a lot of negative news is coming in, and the stress can affect our appetite too! The medical infrastructure is overburdened, and covid positive patients are being suggested to home quarantine instead of running to the hospitals unless they are critical.  Well, Quarantining is easier being said than done! The novel coronavirus takes the taste and smell away, and you may not even want to eat anything at all, but it's hard to ignore the fact that taking a healthy diet can actually help you in a quick recovery from covid. If you are covid-positive or taking care of one, this blog is for you as we bring you three easiest and quick homemade recipes!

Vegetable Soup

Prep Time: 20-30 minutes

Ingredients 

Carrot Onion Tomatoes Beetroot Handful of beans Garlic Ginger Turmeric powder Salt Pepper

Method

  • Roughly chop all the vegetables.
  • Take a pressure cooker and put all the chopped vegetables, beans, add crushed garlic and ginger.
  • Add a pinch of turmeric powder, salt and pepper to taste
  • Add water according to the consistency you like.
  • Cook until two whistles and allow it to cool.
  • Strain and serve.

 Vegetable Khichdi

Prep Time: 20-30 minutes

Ingredients

Desi Ghee Moong dal Rice Carrot Tomatoes Peas Ginger Turmeric powder Asafoetida Bay leaf Peppercorns Cinnamon Stick Salt Coriander leaves

Method

  • Roughly chop all the vegetables (you can add any other vegetable of your choice).
  • Take a pressure cooker and heat 1 tbsp desi ghee.
  • Add crushed ginger, asafoetida, peppercorns, bay leaf, cinnamon stick and cook for a minute.
  • Take 1/2 cup moong dal and roast it with all the spices.
  • Add 1 cup washed rice along with the chopped vegetables.
  • Add turmeric powder, salt to taste and 4 cups of water.
  • Cook until three whistles.
  • Temper with coriander leaves and serve hot. 
Note: If you are not a fan of rice, you can also make the same recipe with oats!

Sooji And Egg Chilla

Prep Time: 20-30 minutes

Ingredients

Desi ghee Eggs Sooji Carrot Onion Beans Tomatoes Garlic Ginger Green chillies (optional) Coriander leaves Turmeric powder Salt

Method

  • Roughly chop all the vegetables (you can add any other vegetable of your choice).
  • Take a bowl, break two eggs, add crushed garlic, ginger, three tbsp sooji, chopped vegetables, coriander leaves, and green chillies.
  • Add turmeric powder, salt to taste and mix the batter well.
  • Add water till you attain a thick consistency. Make sure that the batter is not too thick.
  • Take a non-stick pan and heat 1 tbsp desi ghee.
  • Pour the batter and cook both sides until brown and crispy.
  • Serve hot with homemade mint chutney.
